The art of making candied fruits

...It's an ancient skill, a slow demanding method that has to be followed meticulously - but so satisfying! The eyes, hands and heart... these are the most sophisticated technologies we call on to produce our crystallized fruit.

  • 1. We select the best fruit growers and build relationships with them based on mutual trust.

  • 2. We watch and wait while nature takes care of growing the fruit.

  • 3. After picking, we sort it visually, keeping only the most handsome, plumpest fruit.

  • 4. Next it's blanched, so that it will absorb the sugar syrup without changing its texture.

  • 5. It is lowered gently into the syrup.
