...It's an ancient skill, a slow demanding method that has to be followed meticulously - but so satisfying! The eyes, hands and heart... these are the most sophisticated technologies we call on to produce our crystallized fruit.

1. We select the best fruit growers and build relationships with them based on mutual trust.

2. We watch and wait while nature takes care of growing the fruit.

3. After picking, we sort it visually, keeping only the most handsome, plumpest fruit.

4. Next it's blanched, so that it will absorb the sugar syrup without changing its texture.

5. It is lowered gently into the syrup.
